I-methylcyclopropene (1-MCP) is a kind of cyclopropene compound, which is a new type of ethylene receptor inhibitor discovered in recent years. It can irreversibly act on ethylene receptor, thus blocking ethylene which is associated with the ripening of the fruit. 1-MCP as a preservative for fruits and vegetables has the advantages of non-toxic, low amount and high efficiency, which can strongly block the physiological effect of endogenous ethylene, and thus has a wide application prospect in the preservation of fruits and vegetables.
