More than 90% of apples, pears, berries and vegetables in China are stored in refrigerators with usual atmosphere. Under normal conditions this technology does not provide guaranteed preservation of high quality of fruits (freshness, juiciness, taste) and protection against physiological lesions (sunburn, decay from aging, drilling of internal tissues, core drilling, Wet burn, etc.) and fungal diseases.

The best technology for the storage of fruits today is storage in a controlled gas environment or dynamic gas environment. They allow to reduce losses, however, do not solve all problems. The cardinal solution of the problem of long-term preservation of fruit quality is both inhibition of ethylene synthesis in fruits and elimination of its influence from external sources during storage, transportation and sale of fruits and vegetables.

Many chemicals used to reduce the effects of ethylene are known. In agriculture many countries of the world use drugs based on chemical compounds. However, these chemicals have a number of significant disadvantages: some have reversible effect or inhibit synthesis of only endogenous ethylene, without influencing the exogenous, others show a high residual content in the fruit after treatment, or have an unpleasant odor.

The 1-MCP joins the proteins of the ethylene receptors and inhibits its biosynthesis and biological effect. It inhibits the production of ethylene, its oxidation products and reduces the intensity of respiration, inhibits the disintegration of chlorophyll and other metabolic processes.

1-MCP can be used in conjunction with all storage technologies. At the same time its efficiency depends on the peculiarities of the variety, the choice of technology and the shelf-space of products.
